Cinnamon is the inner bark of a tropical evergreen tree. It is harvested while it is still pliable then dried into curls and sold as sticks or ground into a powder yeilding a warm, sweet flavor. It is used in the preparation of many recipes in the Mediterranean. In the Middle East, it is often used in savory dishes of lamb, chicken and beef.  Used in several Classic Lebanese Cuisine recipes such as Cardamom Chicken with Rice (Djeaj ma Ri Bouhari).
